Yogurt and Granola Parfait

Crunchy homemade granola (oil-free)

  • 2 cups large oat flakes
  • 1/2 cup chopped dates
  • 1/2 cup chopped walnuts
  • 1/4 cup unsweetened coconut
  • 1 tsp. ground cinnamon
  • 1/4 cup water
  • 3 tbsp. maple syrup
  • 1 tsp. vanilla extract

Remaining ingredients

  • Vanilla Greek yogurt (or vanilla yogurt)
  • Blueberry or berry jam (homemade or store-bought)
  • Banana slices
  • Chopped walnuts
  • Blueberries, raspberries or strawberriescoated with VERIFRUIT dark chocolate

PREPARATION

Granola

Preheat oven to 350°F (180°C) and line alarge baking sheet with parchment paper.

Place all ingredients on the baking sheetin the order shown. Mix evenly with hands. Spread out and bake for 22 to 23 minutes.Stir the granola once halfway through baking. Let cool for 15-20 minutes beforeassembling the parfaits.

Assembly

Start with a little granola in servingglasses, followed by a spoonful of Greek yogurt and a little jam. Repeat, thengarnish with slices of banana, chopped walnuts and your choice of VERIFRUIT dark chocolate-coveredblueberries, raspberries or strawberries.
